This short course will focus on the innovations in food processing technologies such as extrusion and thermal processing, applications focused on value-added utilization of fruits, vegetables, grain, and challenges related to quality control, food safety and nutrition. Speakers from Kansas State University, North Carolina State University, Indian Institute of Crop Processing Technology, Thanjavur and Wenger Manufacturing (USA) will provide their perspectives.
The course will be particularly useful for scientists, teachers and professors from academia (from disciplines such as food science, nutrition, human ecology, home science and engineering), and also small, medium and large-scale businesses that have interest in production of value-added food and feed products using extrusion and other technologies.
